Tumbaga is an alloy of gold, copper and silver, used in pre-Columbian cultures for elaborate metalwork, with the marriage of gold and silver symbolizing balance. The name is used for this coffee to symbolize the balance of great coffee without the caffeine. The producers use fresh, quality coffee, selected specifically to harmonize with the decaffeination process to produce a consistent great cup of coffee.
This coffee is decaffeinated using a substance derived from sugar cane called Ethyl Acetate; EA for short. The EA is paired with the fresh water to gently extract caffeine from the beans without subjecting them to excessive heat, pressure, or chemicals. This preserves the inherent characteristics and authentic essence and qualities of the coffee, without the use of any artificial additives.
