Pink Bourbon - Cold Washed

Rodrigo Sanchez Valencia, a third-generation coffee producer, is renowned for his innovative approach to coffee processing and meticulous attention to detail. Located in the Huila department of Colombia, his Monteblanco farm is committed to producing consistent, high-quality coffee. Rodrigo is often credited for helping discover and cultivate the Pink Bourbon varietal.
Initially thought to be a hybrid of red and yellow bourbon, recent studies actually point to Pink Bourbon being an Ethiopian landrace. Prized for their citrus, florality and fruity notes, their naturally high sugar content make them the perfect candidate for a variety of processing methods.
Cold Washed Processing - Pioneered by Rodrigo and his team in 2015, the process consists of de-pulping freshly harvested coffee cherries and placing them in a cold room to prolong fermentation for 76 hours. After this, the coffee is fully washed and dried on raised beds in the shade for 26-28 days.
The result is a deliciously sweet cup blooming with florals. The bright citrus notes pair beautifully with the sweetness of lychee and honey, presented within a delicate, tea-like body. Excellent as filter.
