Mountain Water Process
Pure spring water from Pico de Orizaba, the highest mountain in Mexico, is used to extract the caffeine from the beans through a series of complex processes including steaming, extraction, filtration and re-infusion. This process removes 99% of caffeine, without the use of a single chemical or solvent, while retaining the beans inherent flavor and nuance.

Four generations of the Keller family have owned and operated Finca Santa Isabel since 1899, growing quality coffee in rich volcanic soil. Their coffee is shade grown and adheres to organic production practices, utilizing one of nature's best natural alternatives to herbicides for weed control; a flock of over 1000 short haired sheep who roam the estate!
